As local residents, we call Petersfield our home and have been for 17 years now.  We are passionate about food, and as catering college graduates, we spend quite a lot of time in the kitchen preparing delicious food.

We have been making pizza on Saturday for as long as we remember.  This started our journey of finding the lost flavours of sourdough style bread - how chewy they were - their taste.  You could simply put good butter on it and be having a fantastic meal.  Remember that experience? We certainly do, and this is what we want to recreate with our dough.

Good food starts with quality ingredients.  Organic produce is essential to us, and we use them whenever they are available.  We are also looking at local producers, their availability, and the ability to deliver.

Our menu is small, and we buy in small batches.  This helps us to avoid food spoilage and waste. 

What makes our pizza different from the others?

Organic Dough

We use Wholemeal Rye, Strong Wheat, Yeast, and Olive Oil - all organic from reputable sources to make our delicious dough. We add Water and Maldon Salt to create the signature sourdough flavour. Once the process is complete and the dough balls are ready, we ferment them for 48 hours at low temperature.

We are a small team with a big dream!  At the moment, we are baking in the afternoon over weekends.  However, we are hoping this will expand in the future.
To ensure food is prepared safely and up to required standards, all equipment must be checked, cleaned and disinfected.  Our ingredients Best Before date is verified twice.  At the time of purchase and also on the day of baking.  We also make pictures of that for validation and future reference.  Some of the ingredients also need to be cooked, for example, pizza sauce and chilled before using them.  Every day we bake, we fill in required forms as per Food Safety regulations.

As you can imagine, all of that preparation takes time, and to ensure we are serving safe and delicious food, we decided to start small, just a couple of hours per week.  This will allow us to build on what we have learned and expand.
